Eggs Benedict

Ingredients
  • 5 eggs ( 3 separated)

  • 1 stick of butter

  • 1 fresh lemon juice

  • avocado

  • tomatoes

  • ham or bacon

  • english muffin

  • 1 Tbsp. white vinegar

  • 1/2 tsp. pepper

  • parsley for garnish


Direction
  1. Add water in a saucepan or small frying pan and bring to gentle boil. add the vinegar to boiling water ( vinegar keeps the eggwhite from separating).

  2. Gently slide the 2 eggs into the boiling water. 4 minutes for soft poach and 6 minutes for medium poach.

  3. Begin toasting the english muffin.


Sauce:
  1. Melt butter in ovenproof measuring cup or bowl.

  2. Separate 3 eggs and add yorks to blender. 

  3. Turn the mixer on high, beat eggs until beginning to foam.

  4. then in thin stream add butter to the eggs,  pepper, and lemon juice.


To assemble the roll:

  • Lay toasted muffin on a plate, layer with ham, tomatoes, avocado and eggs. drizzle the top with the sauce.​
